This is what you will do

Classes are run by an English speaking Thai cook at the Thai Culinary School. Our regular course runs over 5 days but is designed to be flexible so that preferences, techniques and menus can be adapted to meet personal tastes and skill requirements.  So if you are not too partial to chilli, you can simply put less in your dish!  Equally seafood and tofu can be substituted instead of meat.

At the school everybody has their own work- station with a gas cooker.  No washing-up is expected of you and you won't need to bring any equipment.  Ingredients used throughout the course are provided and cleaned for you though  you will learn how to prepare them as this is an integral part of the Thai cooking technique.

Typically you will be collected from your hotel at 09.30 and start the day with a trip to the market or a chat about cooking techniques before preparing a few dishes.  Lunch and drinks are provided by the school - in fact you will eat what has been cooked that morning so it pays to listen to the teacher!  The course continues after lunch until about 16.00 where you will be free to visit the town or go out with other members of the group.  At the end of the course you will receive a colour cook book that includes the recipes you have learnt.

Cooking Package Itinerary 7 days / 6 nights

Day 1
We will collect you from your flight at Bangkok airport and transfer you to your hotel.  Most flights arrive in the morning so you will have a  free day for suggested visits to the Grand Palace or take a long-tailed boat around the canals of Bangkok (tours assisted if required).  1 night hotel with breakfast.

Day 2
Transfer to the airport for a Thai Air flight to Chiang Mai, (departure time of your choice), and continue to your hotel where you will spend the next 6 days. Free day  for personal exploration, visiting or for shopping. 5 nights hotel with breakfast and daily transfers to the classes.

Day 3
Introduction to Thai Ingredients
Thai Hot and Sour Soup
Green Curry with Chicken
Thai Style Fish Cakes
Thai Fried Noodles
Lunch
Minced Pork Northern Style
Water Chestnuts with Coconut Milk

Day 4
Making Curry Pastes
Panaeng Curry with Pork
Chiang Mai Curry with Chicken
Fried Fish with Basil
Sweet and Sour Vegetables
Lunch
Spicy Glass Noodle Salad
Black Sticky Rice Pudding
Thai Fruits with Sweet Chilly

Day 5
Tour of the Local Market
Chicken in Coconut Milk Soup
Red Curry with Fish
Fried Mushrooms with Baby Corn
Fried Big Noodles with Thick Sauce
Lunch
Papaya Salad and Sticky Rice
Steamed Banana Cake
Fresh Thai Fruits

Day 6
Shopping at the Market
Yellow Curry with Chicken
Steamed Fish in Banana Leaves
Chicken with Cashew Nuts
Big Noodles with Sweet Soy Sauce
Lunch
Spicy north-eastern Prawn Salad
Bananas in Coconut Milk
Pickled Thai Fruit

Day 7
Vegetable Carving
Clear Soup with Minced Pork
Spring Rolls
Roast Duck Curry
Chicken with Ginger
Lunch
Chicken in Pandanas Leaves
Mango with Sticky Rice
Spicy Thai Fruit Salad

The course will finish in the afternoon on day 7 but many of our clients stay an extra night and leave Chiang Mai the following day.
And Now?
This isn't all about work, so how about a cocktail on a tropical beach, a boat trip down the Mekong or sunset at Angkor Wat?
